Betty - while a local historic district might be one way to go, I would probably suggest a well written restriction on the property with the appropriate "holes" that would allow changes for agricultural purposes as specifically defined by the organization.  The reason I suggest this is because agricultural uses aren't able to be limited through zoning - so they may want to start to define different things as agriculture (brewing?) when it would impact the historic character.  The restriction allows you to be in the driver seat.
